BLACK BEAN, LOTUS ROOT & CARROT SOUP (Winter Longevity Guide)

Ingredients:

1 cup black beans, soaked overnight 1 lotus root, sliced
2 carrots, chopped
4 cups broth or water 2 slices ginger
1 tbsp tamari or coconut aminos

Instructions:

Simmer all ingredients until beans and lotus root are tender (about 1 hour). Season to taste. Strengthens Kidney and Spleen while anchoring internal warmth. ‍
